In this virtual demonstration class you will learn the basics of making pâte à choux, the dough used for cream puffs and éclairs— crisp on the outside, soft and airy on the inside. Tina will show you how to mix and pipe the dough, as well as how to make a filling of crème diplomate. Then she'll show you how to fill the dough and top the éclairs with chocolate glaze.
